In a rush, or low on kitchen equipment? Microwaving scrambled eggs might sound like an odd idea, but it’s actually quick and easy!
Crack the eggs into a microwave-safe bowl and whisk together with a fork or whisk.
Add the milk or water to the bowl and whisk until well combined.
Season the mixture with salt and pepper to taste.
Spray the bowl with cooking spray or add a small pat of butter to the bowl.
Microwave on high for 30 seconds, then stir the mixture with a fork.
Microwave for an additional 30 seconds and stir again.
Continue microwaving in 30-second intervals, stirring after each interval, until the eggs are cooked through but still moist and creamy.

- Eggs. I use large eggs for cooking and baking. You could use any kind of egg you have.
- Milk. You can leave out the splash of milk if you prefer. It does make for creamy and fluffy eggs, but you can use heavy cream, sour cream, creme fraiche, stock or water or nothing at all. I use whole milk or 2% with no major difference in flavor.
- Butter. This helps to prevent sticking to the bottom of the pan, and adds flavor. Olive oil can also be used.
- Seasoning. Go simple with salt and black pepper, or use paprika, cumin, or chili powder

Get prepped
Add the eggs to a large bowl, and whisk together until well blended.
Melt a little butter in a skillet over medium low to medium heat. Pour the egg mixture into the skillet and let it sit for a few seconds until it starts to set.
Cook the eggs, and gently move the eggs around from the side of the pan with a silicone spatula or wooden spoon until soft and fluffy and in large, soft curds. Season with salt and pepper.
