Chicken tenders marinated in a homemade satay marinade threaded on skewers and grilled to perfection. Serve with these delicious Chicken Satay Skewers with Peanut Sauce!
I am SO happy to be sharing this chicken satay recipe with you today! It’s a GREAT one to make ahead, and makes everyone the family happy. I mean, come on, it’s meat on sticks!! (name that movie reference).
We are marinating chicken tenders, threading them on skewers, grilling then serving with a DIVINE peanut dipping sauce. What’s not to love?

WHAT IS SATAY?
Essentially, Satay (Indonesian spelling is “sate”) is a Southeast Asian dish – using seasoned, skewered and grilled meat, typically served with a peanut sauce, but can be served with anything you like!!
MAKE AHEAD
Mix these up and store them in the refrigerator up to 48 hours ahead.
FREEZE
Add the marinade to a ziplock bag. Add the chicken to the marinade and freeze until needed.
Thaw, then grill! Make sure to discard the marinade (since it was stored with raw chicken and all)
Ingredients:
- FOR THE CHICKEN
- CHICKEN TENDERS – boneless chicken thighs are also good, just cut into bite-sized pieces before threading on the skewers.
- OLIVE OIL
- HONEY
- SOY SAUCE
- GINGER
- CURRY POWDER – any type will work, my favorite curry powder is on Amazon!
- GARLIC
- FOR THE PEANUT SAUCE
- PEANUT BUTTER – use the creamy peanut butter, not the chunky kind
- CHICKEN STOCK
- LIME JUICE – fresh!
- BROWN SUGAR – I use dark brown sugar
- CURRY POWDER
- SOY SAUCE
- GINGER
- RED PEPPER FLAKES
How to make the chicken:

- PREP – Thread the chicken on skewers (soak the skewers in water for 30 minutes first). Mix the rest of the ingredients in a shallow pan or medium bowl.
- MARINATE – Toss to coat chicken pieces with marinade, and allow to marinate 30 minutes
- GRILL – Preheat the grill to medium-high heat, then grill chicken skewers a few minutes on each side until done (165 degrees F). Serve with the peanut dipping sauce (satay sauce) (recipe below)
How to make the peanut sauce:
- Place peanut butter in heavy medium saucepan.
- Slowly add chicken broth, then all other ingredients.
- Stir over medium heat until smooth and thick, about 6 minutes

Grilled Chicken Satay Skewers (with Peanut Sauce)
Ingredients
For the chicken
- 1 lbs chicken tenders
- 1 Tbs olive oil
- 1 Tbs honey
- 1 Tbs soy sauce
- 1 Tbs ground ginger
- 1 Tbs curry powder
- 1 Tbs garlic (minced)
For the Peanut dipping sauce
- 1 cup creamy peanut butter ( )
- 14.5 oz chicken stock
- 1/4 cup lime juice fresh (fresh)
- 3 Tbs dark brown sugar
- 1/2 tsp curry powder
- 2 1/2 Tbs soy sauce
- 2 Tbs fresh ginger (peeled, grated)
- 1 tsp crushed red pepper flakes
Directions
For the chicken
- Thread chicken on skewers (soak the skewers in water for 30 minutes first)
- Mix the rest of the ingredients in a shallow pan.
- Coat skewered meat with marinade, and allow to marinate 30 minutes
- Grill or Broil chicken skewers until done
- Serve with Peanut dipping sauce
For the Peanut dipping sauce
- Place peanut butter in heavy medium saucepan.
- Slowly add chicken broth, then all other ingredients
- Stir over medium heat until smooth and thick, about 6 minutes

You’re so right – what’s not to love here?!? Especially since they can be made ahead and even frozen – I just love having those kinds of options for busy weeknights, and also for parties when make-ahead recipes can help keep the busy hostess sane and calm!
