A yummy and flavorful Chicken Rice Soup, packed with flavor – warming and filling, perfect for the whole family!
Fresh ginger, green onions, sesame oil, and a little soy make this Asian Chicken Soup one of the tastiest soups you’ll make!
Soup season is HERE. I couldn’t be more excited for some cooler weather, and a reason to make ALLTHESOUP. I’m in the process of stocking my freezer with deliciousness.
Soup is the ultimate cold-weather comfort food, and I’m ALL about it! Any meal I can make in less than 30 minutes, is a winner for me. When a recipe tastes like this, I’m even happier.
I’m planning on having a freezer full of soup so I can grab a different one each day for lunch, or have them on hand to grab a quick dinner, or soup course whenever I need or want one.
With just a few simple ingredients, including canned creamed corn (you can, of course, use fresh corn, and switch the white rice out for brown rice or wild rice if you wish) you’ll be amazed at how quick this is and how yummy!

What do do with leftovers?
- Store this soup in a sealed container in the refrigerator for up to 5 days.
- This is a great recipe to freeze.
Substitutions/Additions
- Using pre-cooked rice (or rice noodles) and rotisserie chicken is a GENIUS as a shortcut.
- When adding the ginger, add a few peeled cloves of garlic.
- Add a little bok choy towards the end of cooking, for a bright green color (and yummy additional flavor)
- Fish sauce is a good addition instead of soy if you like it!

- Ginger – I buy this whole in the produce section and use it fresh.
- Chicken stock – make your own chicken stock, or grab a carton of chicken broth from the grocery store.
- Soy sauce – this gives a salty, savory taste the soup. Switch it out for tamari if you prefer.
- Sesame oil. This isn’t 100% essential, you could skip it if you don’t have it, but I personally love the flavor. If you can find it, do use it!
- Creamed corn. Also called cream-style corn by some brands.
- Rice – precooked rice, I use long grain – but you can use whatever you have leftover.
- Chicken – cooked chicken breasts, cut into chunks
- Green onions – because they’re pretty! (and they add a yummy onion flavor)
- Salt & pepper – as always, this is to taste.
How to make this recipe

- With the side of a large knife, crush the piece of ginger, but keep it in one piece.
- In a large pot or dutch oven, combine the ginger, stock, soy sauce, and sesame oil. Bring to a boil, then reduce the heat to simmer for 5 minutes. Remove the ginger piece, and discard it.
- Add the corn, rice, chicken, and green onion.
- Simmer a further 5 minutes, until warmed through.
- Ladle into serving bowls.
- Devour.

Asian Style Chicken & Corn Soup with Rice
Ingredients
- 1 inch piece fresh ginger
- 4 cups chicken stock
- 1 Tbs soy sauce
- 1 tsp sesame oil
- 14.75 oz creamed corn
- 2 cups cooked rice
- 1 1/2 cups cooked chicken breast (chopped roughly)
- 1 scallion (thinly sliced (keep some for garnish))
Directions
- With the side of a large knife, crush the piece of ginger, but keep it in one piece.
- In a medium saucepan, combine the ginger, stock, soy sauce and sesame oil.
- Bring to a boil, then reduce the heat to simmer for 5 minutes.
- Remove the ginger piece, and discard.
- Add the corn, rice, chicken and scallion.
- Simmer a further 5 minutes, until warmed through.
- Ladle into serving bowls.
- Devour.
