This homemade poultry seasoning recipe is a simple blend of five dried herbs that will save you a trip to the store, and let you control the flavor! Make a batch and keep it handy for when you need to spice up dinner.
Poultry seasoning mix is often used in recipes on this site, and many other recipes.
I first made this “poultry seasoning blend” for a recipe I found, and I since I didn’t have any on hand, I had to improvise. I liked my blend so much that I continue to make it! It’s the perfect substitute for poultry seasoning from the store.
Since much like all of the spice blends you find in spice aisle of the grocery store, they’re all able to be substituted using herbs and spices you already have in your pantry.
No need for an extra purchase, or to pay a premium price for someone to blend it for you. Also good for my friends in the other hemisphere, who might not be able to find these things in their stores!
When you make your own poultry seasoning, it means you can change it up however you like! Plus, pre-made seasonings often contain fillers and preservatives, so if you make your own – you are guaranteed a better quality finished dish.
I leave salt out of my poultry seasoning, because I like to add it separately depending on what I’m using it for.

What is in Poultry Seasoning?
Most poultry seasoning ingredients contain a blend of sage, thyme, marjoram, rosemary and pepper. Sometimes salt, sometimes garlic powder.

How to use Poultry Seasoning:
Use it as a chicken seasoning for baking chicken breasts or turkey dishes at Thanksgiving, or in recipes such as Homemade Stuffing, and Chicken Noodle Soup. This Slow Cooker Chicken & Barley Soup (from Cheese Curd in Paradise) is amazing! You could sprinkle it on a chicken or turkey thigh and veggies and roast it too!
Storage: Keep in an airtight container and use as needed. I buy spice jars from Amazon (affiliate link).
Additions: You may like to add celery seed, celery salt, onion powder, nutmeg or cloves. There is no salt in this recipe, so bear that in mind when thinking about seasoning. Cayenne pepper will give this a kick, too!
Recipe Ingredients and Possible Substitutes

- Sage. I use rubbed sage (you can use ground sage). It is a fragrant herb with gray-green leaves, often used to add a savory flavor to dishes. It has a slightly peppery taste with hints of eucalyptus and citrus.
- Thyme. Dried thyme leaves. If you want to use ground thyme that will work too. A small aromatic herb with tiny leaves, commonly used in Mediterranean cuisine. It provides a subtle, earthy flavor with hints of mint and lemon.
- Marjoram. Similar to oregano but with a milder flavor, marjoram is a versatile herb used to enhance the taste of various dishes. It adds a slightly sweet and floral note with hints of pine and citrus. You can swap it out for oregano if you prefer.
- Rosemary. An evergreen herb with needle-like leaves, rosemary is known for its strong, piney flavor with hints of lemon and woodiness.
- Pepper. I use freshly ground black pepper.

Measure all ingredients into a mortar and pestle and grind the spices lightly. Don’t do it to the point that you have a fine powder, you still want to see the leaves of the seasoning.
We are just grinding to make them all the sameThy size and to blend well.
You could use a food processor or coffee grinder if you want to, but you can easily just combine all ingredients in a bowl and call it good.

- 2 tablespoons rubbed sage
- 1 tablespoon dried thyme
- 1 tablespoon dried marjoram
- 1 tablespoon dried rosemary
- 1 tablespoon cracked pepper
