These Blue Cheese Crusted Pork Chops are the best! Easy prep – tasty results and will delight your taste buds, and bring a bit of “fancy” to a weeknight!
Dinner time! We’re in the throes of back to school and a few other changes going on, which makes weeknight dinners a grab-and-go or a scramble-and-shovel. Yeah. Totally made up that last term “scramble-and-shovel”
Since they spend most of their time in the oven, aka hands-off – I often pair these Blue Cheese Crusted Pork Chops with a risotto. Because why not? My favorite one is a simple Garlic Parmesan Risotto that can be made while your chops cook.
This pork chop recipe is pretty easy. We mix up the topping, and add it to the chops (seasoned with salt and pepper). Then, cook them for about 2 minutes in an oven proof skillet. Transfer the skillet to the oven and cook for about 6 minutes, then lightly broil the top until golden brown. And that’s really it!
I totally scrape the skillet for the crusted breadcrumbs/blue cheese that got extra crispy in the oven. Not even ashamed.

This recipe is so simple, but has such wonderful flavors. It’s tasty and impressive enough that if say, someone was coming for dinner on a weeknight, and you just rolled in the door at 5:30… you could still prep and cook this, and have time to make a few sides as well – and pour yourself a glass of wine. - Blue Cheese. You can buy this pre crumbled, or crumble it yourself. Choose your favorite! I like gorgonzola and stilton
- Seasoned Salt. This is a seasoning blend, I suppose. It’s got salt, sugar, paprika, turmeric, onion and garlic
- Breadcrumbs. You can of course use packaged breadcrumbs, but in this recipe I do just throw some bread into the food processor. Makes a softer topping, that soaks up all the flavors, and causes extreme deliciousness. Panko breadcrumbs will make this extra crispy, but regular will work too.
- Olive Oil. You can use Extra Virgin or a light blend, either will work. You may need a little extra to get a crumb-able consistency, so keep the bottle out.
- Pork. Use thick cut loin chops, or bone in pork chops. Both are delicious. You just need to adjust cooking time. Pork should be 145F in the middle (use a thermometer to check!)

Make the topping
In a small bowl, stir together bread crumbs, cheese, parsley or onion, salt, and pepper. Add enough oil to create a stuffing like consistency, mixing well. Set aside.
Season the pork chops
Season the pork chops with salt and pepper on both sides.
Spread crumb mixture evenly on chops, and pat to adhere.
Pan fry
Preheat the oven to 400 degrees F, and heat a large skillet (oven proof) to medium high heat.
Add some olive oil to a large skillet and heat.
Cook pork chops for 2 minutes, in the skillet
Transfer to the oven
Transfer the skillet to the preheated oven. Cook 6-8 minutes until internal temperature on a thermometer reads 145 degrees F.
Broil for a few minutes until crumbs are browned and cheese starts to melt – watch carefully!
Remove from heat and let rest for 5 minutes before serving.
Devour.

Pork chops. Boneless pork chops that are about an inch thick cook fastest. Thicker chops, and bone-in chops will take longer to cook, and extra few minutes.
Topping. Add some grated parmesan cheese to the bread crumb topping for an extra kick of cheesy flavor.
Skillet. If you don’t have an oven proof skillet, no problem. Just pan fry in a regular skillet, then transfer the chops to a baking dish or baking sheet before putting in the oven.
