My family loves this crock pot pork loin recipe, it’s a good one to make during the week or even a busy weekend. The long cooking time means I can set it, forget it, and get on with my day. Perfect for when life gets a little crazy, or you have a burst of inspiration to be organized on any given morning.
No time in the morning? Prep this meal the night before and let it hang out in the fridge overnight, and then just dump and run in the morning.
The recipe and instructions below show you how to make gravy in both the slow cooker AND stovetop. I feel like gravy is super essential whenever I cook a pork loin, whether roasted or slow-cooked. It just gives that home-made comforting touch.
If you manage to get home early enough, add a handful of asparagus or green beans into the crockpot and cook for 30 minutes, you’ll have a vegetable side done too!

Ingredients:
- VEGETABLE OIL
- GARLIC POWDER, THYME, ONION POWDER, SALT & PEPPER
- CHICKEN STOCK, SOY SAUCE, AND APPLE CIDER VINEGAR – make your own chicken stock (or use chicken broth), or buy a carton from the store.
- PORK LOIN – you’ll need a 3 to 4 pound pork loin. This cut of meat is fantastic when roasted or slow-cooked!
- APPLES – any kind of apple will do. Granny Smith apples are the tartest, whereas a gala or Honeycrisp will give you a sweeter side.
- ONIONS – just peel, chop and throw them in!
- CORN STARCH
How to make this delicious pork recipe:
- GET PREPPED:
- Heat the vegetable oil in large skillet over medium-high heat.
- Mix together the garlic powder, thyme, salt & pepper in a small bowl.
- Whisk together the chicken stock and apple cider vinegar.
- SEASON & BROWN
- Rub the pork loin with the mixed seasoning, and brown on all sides.
- Add the onions and apples to the crockpot, add the browned pork loin on top.
- COOK
- Pour in the stock, soy sauce & apple cider vinegar, cover and cook for 6-8 hours on low.
- SERVE
- Remove pork loin and apples/onions from the crockpot.
- Allow to rest for 10 minutes, then slice.
TO MAKE GRAVY IN THE CROCKPOT
- Remove all but 2 cups of liquid. In ½ cup of the removed liquid, whisk in the cornstarch until smooth. Whisk back into the crockpot, and heat on high for 15 minutes.
- Whisk constantly until thickened.
TO MAKE GRAVY ON THE STOVETOP
- Remove 2 cups of liquid and add 1 ½ cups to a small saucepan, heating over medium-high heat.
- In the remaining ½ cup of the liquid, whisk in the cornstarch until smooth, then add to the saucepan, whisking until thickened.
FAQs and Kylee’s Notes
- Use a premade herb blend in place of the garlic/onion/thyme – I recommend my homemade Italian Seasoning whenever a recipe calls for this kind of seasoning!
- What to serve with Pork Loin? I love green beans and apples with the onions. You can add them to the crockpot during the last 30 minutes of cooking. Mashed potatoes or buttered noodles are always a good choice if you like carbs like me!

Crock Pot Pork Loin
Recommended Equipment
Ingredients
- 2 Tbs vegetable oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp cracked pepper
- 2 cups chicken stock
- 2 Tbs soy sauce
- 2 Tbs apple cider vinegar
- 3-4 lb pork loin
- 2 apples (peeled, cored and quartered)
- 2 onions (quartered)
- 3 Tbs corn starch
Directions
- Heat the vegetable oil in large skillet over medium-high heat.
- Mix together the garlic powder, onion powder, thyme, salt & pepper in a small bowl.
- Whisk together the chicken stock, soy sauce and apple cider vinegar.
- Rub the pork loin with the mixed seasoning, and brown on all sides.
- Add the onions and apples to the crockpot, add the browned pork loin on top.
- Pour in the stock, soy sauce & apple cider vinegar, place the lid on the crockpot and cook for 8 hours on low.
- Remove pork loin and apples/onions from the crockpot.
- Allow to rest for 10 minutes, then slice.
- Serve with the onions, apples, and gravy.
- Devour.
