This is a the ground beef version of a classic recipe (authentic Beef Stroganoff uses sautéed pieces of beef) to make it quicker, easier and more budget friendly. I’m all for cheating if it saves on those things!
Change it up to your tastes and make it your own by switching out some of the ingredients for your favorites, or to use up what you have on hand.
I usually have the ingredients on hand, since ground beef dinners tend to be budget friendly, quick and easy. I love meatballs, Poor Man’s Stew, Hamburger Casserole and Cheeseburger Pasta as well!

Store in an airtight container in the refrigerator for up to 4 days. Reheat until it is piping hot!
Substitutions/Additions
While I prefer fresh ingredients, You could use cream of mushroom soup if you are in a pinch. Just reduce the amount of stock to 1 cup, and add it at that same step. You also won’t need sour cream.
Ground turkey would work in place of ground beef if that is what you have on hand.
Freezing instructions
You can freeze Beef Stroganoff. However, the sour cream sauce may separate or become grainy once thawed. When reheating, do it gently on the stovetop and try adding a splash of cream or broth to restore the consistency.

- Butter. Used to sauté the vegetable, olive oil can be used as well.
- Onion, white button mushrooms, garlic. You could use any kind of mushroom that you like, cremini and brown mushrooms also work in this. Garlic powder can also be used in place of fresh garlic.
- Lean Ground beef. I use lean beef. If you use one with higher fat content, be sure to drain any excess grease.
- Stock, Worcestershire sauce, Dijon mustard. Beef broth or stock gives this dish a ton of flavor, when combined with the sauce and mustard. You can also use beef bouillon with water.
- Sour cream. Greek yogurt, cream cheese, crème fraîche, or a little bit of heavy cream can be used as substitutes for sour cream.
- OPTIONAL: Fresh parsley for garnish and Egg noodles for serving.

Get prepped
Dice the onion, slice the mushrooms, mince the garlic. Prepare to cook egg noodles (if using).
Cook
In a large skillet, Dutch oven or frying pan, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
Add the ground beef to the skillet and cook, breaking it apart with a spatula, until it’s browned and cooked through. Drain any excess fat if necessary.
Stir in the sliced mushrooms and minced garlic. Continue cooking for another 2-3 minutes until the mushrooms soften.
Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well to combine all the ingredients.
Bring the mixture to a simmer, then reduce the heat to low. Let it simmer for about 10 minutes, allowing the flavors to meld together. If there is not enough liquid, add a little more. Too much liquid? Try a slurry of cornstarch and water (see the FAQs for details)
Remove from heat, stir in the sour cream and season with salt and pepper to taste.
